Cut the cod loin into equal sized chunks about 1-1.5 inches wide.
Combine the cod, pepper, tomatoes, coconut milk, lime juice, tomato puree, garlic, ginger and spices listed above.
Cook on low for 3 hours.
After the slow cook, add chopped coriander spinach and stir, being careful not to break up the chunks of cod. The remaining heat will be enough to make the spinach wilt. Serve and enjoy.
