Pea and Slow Cooker Ham Soup

A super easy pea and ham soup, that uses only 5 ingredients

Ingredients
  

  • 300 g Smoked gammon joint Most joints are much larger, so you'll have lots of yummy leftover ham!
  • 750 g Frozen peas
  • 1 Onion
  • 2 cloves Garlic
  • 25 g Fresh Mint
  • Pinch Salt
  • Pinch Black pepper

Instructions
 

  • Place the gammon in the slow cooker and cover with fresh water. Place half and onion in the slow cooker too (and save the other half).
  • Cook the gammon on low for 7-8 hours. Discard the onion, but save the liquid, and shred the desired amount of gammon.
  • Blend the peas, mint, garlic, the other onion half, and 550ml of the liquid from the slow cooker. Add a pinch of salt and pepper. (Be very careful blending hot liquid. If you use something sealed like a nutribullet it’s better to wait for the liquid to cool slightly or it could explode!) Add more liquid if you prefer a thinner soup.
  • Serve up the soup and add plenty of shredded gammon to the bowl,
