Combine all of the slow cooker ingredients listed above and stir well.
Cook on high for 2-3 hours or low for 5-6.

Ahead of time prepare any ingredients that you want to include in your gyros. For us, this means cooking fries and chopping vegetables. It may include making Tzatziki if you're using a homemade recipe.
Place warm flatbread on a square of foil or baking paper. Assemble your wrap with the pork and your toppings. Fold the flatbread over in half and use the foil or paper to wrap the bottom half of the wrap up.
