Slow Cooker Moroccan Style Chicken

Moroccan inspired marinated chicken thighs, slow cooked to perfection.

Equipment

  • Slow Cooker
  • Container or sealed bag for marinating

Ingredients
  

To marinate

  • 6 Chicken thighs I use bone-in, skin removed
  • 3 tbsp Olive oil
  • 1.5 tbsp Ras el Hanout
  • 1 tsp Paprika
  • 1 tsp Salt
  • 2 cloves Garlic Minced
  • 2 Zest of lemons

To add to the slow cooker

  • 2 Lemons sliced
  • 250 ml Chicken stock
  • 100 g Olives Mixed, or just black
  • 500 g Potatoes Chopped into bitesize chunks
  • 60 g Raisins

To serve

  • bunch Parsley fresh, chopped

Instructions
 

  • Create your marinade by combining Ras el Hanout, paprika, salt, olive oil, lemon zest and garlic.
  • Combine chicken thighs (skin removed) with the marinade. Store in a sealed container or plastic food bag for 2-24 hours.
  • After marinating, in the slow cooker combine the chicken with slices of lemon, chicken stock, potatoes, olives and raisins.
  • Cook on high for 3-4 hours or low for 6-8.
  • Serve in bowls and top with plenty of freshly chopped parsley.
