Remove the skin from the pork and discard. Cut the pork shoulder into into 8-12 large chunks, to allow for a more even cook and easier shred at the end.
Combine all other ingredients in the slow cooker: honey, light soy, ginger, garlic, sesame oil, lime juice and chilli flakes.
Cook for 7-8 hours on low, or 3-4 hours on high.
After the slow cook, shred the pork, serve and enjoy!
