Slow Cooker Shredded Chicken Satay Noodles
Tender chicken in peanut satay sauce with egg noodles.

- 3 Chicken breasts
- 125 g Peanut butter crunchy
- 75 ml Light soy sauce
- 100 ml Water
- 1.5 tbsp Mild curry powder
- 15 g Ginger minced or grated
- 3 cloves Garlic minced or grated
- 2 Carrots thinly sliced
For later
- 170 g Egg noodles (cooked) 170g dried weight
- Toppings of your choice such as spring onion, crushed peanuts and sesame seeds
In a bowl, mix peanut butter, light soy sauce, water, mild curry powder, garlic and ginger. This is your satay sauce.
Place chicken breasts and thinly sliced carrot in the slow cooker. Pour over the satay sauce and mix well.
Cook for 2.5-3 hours on high or 5-6 hours on low.
Stir in cooked egg noodles and add toppings of your choice, such as spring onion, crushed peanuts and sesame seeds.
