Slow Cooker Shredded Chicken Satay Noodles

Tender chicken in peanut satay sauce with egg noodles.

Equipment

  • 1 Slow Cooker

Ingredients
  

  • 3 Chicken breasts
  • 125 g Peanut butter crunchy
  • 75 ml Light soy sauce
  • 100 ml Water
  • 1.5 tbsp Mild curry powder
  • 15 g Ginger minced or grated
  • 3 cloves Garlic minced or grated
  • 2 Carrots thinly sliced

For later

  • 170 g Egg noodles (cooked) 170g dried weight
  • Toppings of your choice such as spring onion, crushed peanuts and sesame seeds

Instructions
 

  • In a bowl, mix peanut butter, light soy sauce, water, mild curry powder, garlic and ginger. This is your satay sauce.
  • Place chicken breasts and thinly sliced carrot in the slow cooker. Pour over the satay sauce and mix well.
  • Cook for 2.5-3 hours on high or 5-6 hours on low.
  • Stir in cooked egg noodles and add toppings of your choice, such as spring onion, crushed peanuts and sesame seeds.
