Slow Cooker Spanish Chicken and Chorizo Casserole

  • Frying Pan

Ingredients
  

  • 6 Chicken thighs Boneless and skinless
  • 200 g Chorizo Sliced
  • 3 cloves Garlic Minced
  • 400 g Tinned tomatoes
  • 400 g Butter beans Tin, drained (= approx 240g)
  • 1 tbsp Paprika
  • 2 tbsp Tomato puree
  • Pinch Salt
  • Pinch Black pepper
  • Handful Parsley
  • 1 Onion Optional, to sauté
  • 1/2 tbsp Olive Oil Optional, for sautéing

Instructions
 

  • Optional: Add a little olive oil to a medium head frying pan and cook the diced onion for 3-4 minutes until soft. Add the garlic for 1-2 minutes. If skipping this step, just use garlic in the slow cooker and not raw onion.
  • Combine all ingredients (except for the parsley) in the slow cooker. Stir well.
  • Cook for 3-4 hours on high, or 6-8 on low.
  • Sprinkle over a handful of freshly chopped parsley. Serve with crusty bread and enjoy.
