Slow Cooker Chilli Sausage Surprise
Ever feel like your chilli con carne could use a little shake up? That’s where this Slow Cooker Chilli Sausage Surprise comes in. Instead of beef mince, I firecracker sausages for extra flavour and texture. It’s a perfect midweek meal that’s ridiculously easy to make. No frying – just throw everything in the slow cooker!

This recipe uses simple ingredients, most of which are store cupboard staples. I use firecracker sausages for an extra bit of spice, but really you can use any sausages of your choice. I slice the sausages into three equal chunks, but you can just put them in whole.
The combination of red kidney beans and black beans fills out the dish, adding a healthy boost of protein and fibre. Along with the herbs and spices, just add a vegetable stock cube – but just the cube – no need to add water.
Once the slow cooker is done, sprinkle over grated cheese and freshly chopped coriander. Then just serve however you like. This chilli is perfect on its own, with rice, or even spooned over jacket potatoes.
This dish is incredibly versatile, and you can easily customise it to suit your taste. Swap the firecracker sausages other flavoured sausages like garlic, herb or smoked varieties. You could even swap for a different type of sausage meat, such as chicken.
Another great thing about this recipe is how well it keeps. The flavours get even better the next day, making it perfect for meal prepping. Store leftovers in the fridge for up to 3 days, or freeze them in individual portions for quick lunches or dinners on busy days.

Equipment
- 1 Slow Cooker
Ingredients
- 6 Sausages of your choice, I use chilli 'firecracker' sausages
- 3 cloves Garlic minced
- 800 g Tinned tomatoes 1 can = 400g
- 400 g Tinned red kidney beans drained, 400g tin = 240g drained
- 400 g Tin drained, 400g tin = 240g drained
- 1 Vegetable stock cube as it is, not mixed with water
- 2 tbsp Tomato puree
- 1 tbsp Ground cumin
- 1 tbsp Ground coriander
- 2 tsp Paprika
- 1 tsp Chilli powder add 1 extra tsp if you want it extra spicy
- 1 tsp Dried oregano
For later
- 50 g Cheese shredded
- handful Fresh coriander chopped
Instructions
- Slice the sausage into 3 equal chunks.
- In the slow cooker, combine the sausages and all other the listed ingredients.
- Cook on high for 3-4 hours or low for 6-8.
- Sprinkle over grated cheese and freshly chopped coriander. Serve and enjoy!
