Slow Cooker Coconut Cod Curry

There’s only a few things to consider with the ingredients in this recipe. Firstly, use a mild or medium curry powder. We add a small pinch of chilli powder too, but the finished dish is still mild and not spicy. The coconut milk, lime, ginger and softly cooked tomatoes make this curry fresh and fragrant.

Secondly, for the fish, we use thick cod loin. You could use other types of fresh fish instead, such as haddock or pollock. Cut the fish into chunks 1-1.5inches in width. The slow cooker is set to low, so the fish cooks gently while all the other flavours come together.

Finally, we love adding plenty of coriander and spinach at the end. However, we know that some people have strong feelings against coriander! You could just omit it, or top with a bit of fresh parsley instead. For the spinach, you don’t need to spend any time cooking it – the heat that’s in the slow cooker will be enough to make it wilt within a minute or two, with a gentle stir. Just be careful not to break up your fish when stirring at the end.

Ingredients
  

In the slow cooker at the start

  • 250 g Cod loin cut into chunks
  • 400 ml Coconut milk
  • Juice of two limes
  • 100 g Cherry tomatoes halved
  • 1 Pepper cut into chunks
  • 2 tbsp Curry powder Mild or medium
  • 1 tsp Tumeric
  • 1 tsp Ground coriander
  • pinch Chilli powder
  • pinch Salt
  • 1 tbsp Tomato puree
  • 2 cloves Garlic minced
  • 10 g Ginger minced

To add at the end

  • 50 g Baby spinach
  • handful Fresh coriander chopped

Instructions
 

  • Cut the cod loin into equal sized chunks about 1-1.5 inches wide.
  • Combine the cod, pepper, tomatoes, coconut milk, lime juice, tomato puree, garlic, ginger and spices listed above.
  • Cook on low for 3 hours.
  • After the slow cook, add chopped coriander spinach and stir, being careful not to break up the chunks of cod. The remaining heat will be enough to make the spinach wilt. Serve and enjoy.

  1. Wonderful! I also add chunks fresh young coconut meat to sauce and make browned garlic rice to put fish and sauce over top. This is one of my kids favorites thank you!
