I’m always sceptical of anything that is hyped up too much on the internet. However, once I tried it, I hate to admit I loved it so much, that I had to adapt it to the slow cooker. In my opinion, the adaptation not only simplifies the preparation but also enhances the flavours.

This recipe uses on easily accessible ingredients. Begin by mixing sundried tomatoes, tomato puree, garlic, oregano, and paprika with a dissolved chicken stock cube and water in the slow cooker. Add the chicken breasts (0r thighs if you prefer) to the herb-infused sauce and slow cook until tender. As the cooking finishes, stir in double cream. Then add cooked pasta along with freshly grated Parmesan and a generous amount of freshly chopped basil.

Equipment

  • Slow Cooker
  • Pan for boiling pasta separately

Ingredients
  

  • 2 Chicken breasts
  • 100 g Sundried tomatoes drained and diced
  • 1 tbsp Tomato puree
  • 3 cloves Garlic
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 1 Chicken stock cube
  • 150 ml Water

For later

  • 170-200 g Pasta cooked
  • 75 ml Double cream
  • 30 g Parmesan grated
  • handful Fresh chopped

Instructions
 

  • In the slow cooker combine sundried tomatoes, tomato puree, garlic, oregano, paprika, a chicken stock cube, water. Stir well, breaking down the chicken stock cube.
  • Add the chicken breasts and stir well until covered with the sauce.
  • Cook for 3-4 hours on high or 6-8 on low.
  • After the slow cook, add double cream to the slow cooker. Stir well. Cook for a further 10-15 minutes. You can break up or shred the chicken to your likeness at this point.
  • In the meantime, cook your pasta and finely chop some fresh basil.
  • To the slow cooker, add your cooked and drained pasta, basil and parmesan. Stir well and serve.
