Slow Cooker Beef Satay Salad

Satay is one of a kind. The sweet, nutty flavours and creamy texture makes for the perfect dish when combined with tender, slow cooked beef. In this recipe we combine beef satay with a fresh, bright salad, which is ideal for a lighter evening meal or a special lunch!

Beef satay ingredients

Best of all, this recipe is incredibly simple. The slow cooker part only requires 5 ingredients. The only preparation required is at the beginning, with the beef. In a hot pan with a little oil, brown off the meat to lock in the flavour and add colour. Once done, transfer to the slow cooker, stir in the other ingredients and set to slow cook.

I make this with a bright fresh Asian style salad, with cold rice noodles. In the end, the salad ends up having a lot more ingredients than the slow cooker dish! If you are looking for ultimate ease, just spoon over some rice or noodles and add in some veggies of your choice.

In the salad pictures below, I use: wholegrain vermicelli rice noodles, spinach, carrot, pepper, red cabbage, radish, mint, corainder, spring onion and lime juice.

Equipment

  • Slow Cooker
  • Frying Pan

Ingredients
  

  • 500 g Beef braising steak cut into bite-sized chunks
  • 200 ml Coconut milk
  • 75 g Peanut butter
  • 50 g Brown sugar
  • 1 tbsp Light soy sauce
  • Handful Crushed peanuts To serve
  • Squeeze Fresh lime To Serve
  • 1 tbsp Neutral flavoured oil For browning

Don't forget

  • Salad ingredients of your choice

Instructions
 

  • In a hot pan with a little oil, lightly brown the beef on all sides for a couple of minutes.
  • Place all ingredients in the slow cooker and stir well.
  • Cook on high for 3-4 hours.
  • Spoon over a freshly made salad of your choice, or serve with rice or noodles. Squeeze over fresh lime and top with crushed peanuts.
